Pootharekulu, also known as paper sweets in English are made with rice starch sheets rolled against Jaggery powder mixed with Dry-fruits, hot Ghee. Each bite of these paper wafers gives anyone a heavenly chewing experience. So one couldn’t resist themselves after eating the delicious Putharekulu for the first time. Let’s go and check-out its making procedure.
'Atreyapuram Pootharekulu' making Procedure
Ingredients

Rice(Jaya Rice) - 2 cups

Oil

Ghee
-
Grated Jaggery

Ghee roasted Cashew

Grated Almonds

Pista
Procedure

Two cups of rice are soaked for 6 hours and are grinded well with water poured in periodic intervals. Milk like looking rice batter which is formed will be taken aside.

This is the part where only the people from Atreyapuram are experts at making. The formed rice batter is then spread across a hot pot surafce using a thin cloth after applying few drops of oil across the surface. The pot will be kept hot by burning dry coconut leaves below its body.

Thin layers of white paper like sheets will be produced in few seconds from the pot surface which are taken aside. That's the reason they are called ‘Pootharekulu’, ‘Pootha’ means ‘Coating’, ‘Rekulu’ in Telugu is meant for ‘Sheets’ in English.

Previous steps will be repeated to get as many sheets as we need.

Once sufficient sheets are made, one sheet will be taken on which the grated Almonds, Pista gratings will be sprinkled.

Once that was done another sheet will be placed on the first sheet and sprinkled with grated Jaggery powder, Ghee roasted Cashew on which Hot Ghee is poured using a spoon sufficiently.

The final paper sheets will be folded from both sides and then finally rolled.
